Gut Health Plate (Gluten free, dairy free, lower carb)

Ingredients

  • 1 handful of greens (spinach, cos lettuce)
  • 4 sprigs of asparagus, tough ends removed (not a vibe)
  • 1 large mushroom
  • 1/2 tbsp Tamari
  • 1 tsp Extra virgin olive oil
  • Generous gift of hummus (Try to find a brand with minimal ingredients that uses Extra virgin olive oil)
  • 1 can wild caught salmon
  • 1 tbsp of pumpkin seeds
  • Drizzle of tahini
  • Salt and pepper to taste
  • Optional: Add in a slice of your GF bread of choice (toasted)

Method

  1. Preheat the oven to 180 degrees Celsius.
  2. In a small bowl add in the mushroom and asparagus and drizzle over tamari and extra virgin olive oil and season with salt and pepper.
  3. Place in the oven and set the timer for 20 minutes.
  4. Meanwhile assemble the salad by placing a big smear of hummus on one side of the plate. Next add the greens to the other side of the plate and top with pumpkin seeds, wild salmon and a generous drizzle of tahini (if you don’t like tahini try a drizzle of olive oil).
  5. Add the roasted asparagus and mushroom on top of the hummus. Add salt and pepper to taste and enjoy!
