Healthy Rocky Road - The rockiest Road

 Ingredients

  • 1/2 cup roasted cashews or roasted peanuts roughly chopped
  • 1 cup puffed brown rice
  • 1⁄2 cup goji berries
  • 1⁄2 cup desiccated coconut
  • 1⁄4 cup cacao nibs
  • Sea salt
  • 2 blocks of melted dark chocolate
  • Optional top with crushed pistachios and goji berries.

Method

  1. Line a slice tray or rectangular container with baking paper.
  2. In a large bowl, combine all ingredients except the dark chocolate
  3. Melt both chocolate blocks in the microwave for 1 minute, stirring at 30 seconds.
  4. Pour melted chocolate over the dry mixture and combine.
  5. Once combined, transfer mixture into tray or container and press down with the back of a spoon.
  6. Top with crushed pistachios and goji berries if using and put in the freezer for a minimum of 2 hours to set before cutting into rough pieces. Store in the freezer.
