Healthy Rocky Road - The rockiest Road
Ingredients
- 1/2 cup roasted cashews or roasted peanuts roughly chopped
- 1 cup puffed brown rice
- 1⁄2 cup goji berries
- 1⁄2 cup desiccated coconut
- 1⁄4 cup cacao nibs
- Sea salt
- 2 blocks of melted dark chocolate
- Optional top with crushed pistachios and goji berries.
Method
- Line a slice tray or rectangular container with baking paper.
- In a large bowl, combine all ingredients except the dark chocolate
- Melt both chocolate blocks in the microwave for 1 minute, stirring at 30 seconds.
- Pour melted chocolate over the dry mixture and combine.
- Once combined, transfer mixture into tray or container and press down with the back of a spoon.
- Top with crushed pistachios and goji berries if using and put in the freezer for a minimum of 2 hours to set before cutting into rough pieces. Store in the freezer.
