Vegan Tofu Scrambled (Vegan, gluten free, dairy free)

Vegan Tofu Scrambled (Vegan, gluten free, dairy free)

Ingredients

  • 150g firm tofu
  • Drizzle EVOO
  • 2 stems spring onions
  • 1-2 small mushrooms, chopped
  • Drizzle Sriracha
  • Handful spinach
  • Spice mix: 1/4 tsp garlic powder 1/4 tsp onion powder 1/4 tsp cumin powder 1/4 tsp smoked paprika powder 1/4 tsp chili flakes 1/2 tbsp nutritional yeast Iodised Salt, to taste

Method

  1. In a medium sized bowl, break the tofu up into medium sized chunks with you hands (or a fork)
  2. Add all spices to the tofu and mix through until all tofu pieces are covered.
  3. Warm a pan over medium heat and add in the extra virgin olive oil.
  4. Add the tofu to the pan and fry off for 30 seconds, stirring continuously.
  5. Add in the spring onion and mushrooms and stir for a couple of minutes until they start to soften slightly.
  6. Drizzle with sriracha, add in the spinach and a dash of water (use more if needed). Stir for another minute or so before serving.

To serve: 1 slice sourdough, 1/2 med avocado, cashew cheese spread (optional), iodised salt (to taste), and hemp seeds.
